Snack Box Protein Pack

Ingredients

Per box:

  • 3 oz chicken bites
  • 1 hard-boiled egg, peeled
  • 1 oz cheese cubes or slices (cheddar, mozzarella, or jack)
  • 1/4 cup nuts or seeds (almonds, pistachios, or mixed nuts)
  • 1/2 cup raw veggies (carrot sticks, cucumber slices, bell pepper strips, or snap peas)
  • 1/4 cup berries or grapes (optional, for a bit of sweetness)
  • 2–3 tbsp hummus or Greek yogurt dip (in a small cup)

Optional swaps/add-ons:

  • Cottage cheese instead of/y in addition to hummus
  • Whole grain crackers or rice cakes (if you want more carbs)

Cooking Instructions

Place eggs in a pot, cover with water. Bring to a boil, then cover, turn off heat, and let sit 10–12 minutes. Cool in ice water, then peel.

Divide Chicken into ~3 oz per box. Cut cheese into cubes or slices (~1 oz per box).

Wash and slice veggies into bite-sized pieces. Rinse berries or grapes and pat dry.

Use 4 compartment-style containers or bento boxes. In each box, add: 3 oz chicken bites, 1 hard-boiled egg, 1 oz cheese, 1/4 cup nuts, 1/2 cup veggies, 1/4 cup fruit (if using), 2–3 tbsp hummus or Greek yogurt dip in a small lidded cup.
