High-Protein Chicken Bites Bowl
Ingredients
Chicken Bites
- 1.5 lb boneless, Chicken bites
Bowl Base
- 2 cups cooked brown rice or quinoa (about 1/2 cup cooked per bowl)
- 1 cup canned chickpeas, rinsed and drained (optional but boosts protein)
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red bell pepper, diced
- Optional: shredded carrots, baby spinach, or mixed greens
High-Protein Yogurt Sauce
- 1 cup plain nonfat Greek yogurt
- 1 small garlic clove, grated (or 1/2 tsp garlic powder)
- 1–2 tsp lemon juice
- 1 tsp olive oil (optional)
- Salt & pepper, to taste
- Optional: chopped parsley or dill
Cooking Instructions

In a small bowl, mix Greek yogurt, garlic, lemon juice, olive oil (if using), salt, pepper, and herbs. Adjust seasoning to taste and refrigerate until serving.

Cook brown rice or quinoa if not already done. Chop cucumber, tomatoes, bell pepper, and any extra veggies. If using chickpeas, rinse and drain.

Heat a large nonstick or cast-iron skillet over medium-high heat. Add chicken in a single layer Reheat 2–3 minutes, stirring occasionally, until nicely browned. Remove from heat.

Add a scoop of rice/quinoa to each bowl. Top with chicken bites, chickpeas, and veggies. Add a generous spoonful of yogurt sauce on top or drizzle it over.
